Diabetes Dinner Menu

Grilled Salmon with Papaya and Kiwi Salad (serves 4)

Ingredient:

4 x 200g salmon fillets, about 1 inch thick
1-2 tablespoons light olive oil
Salt and pepper to taste

 

To make salad:

300g papaya, seeded, peeled and diced
60g kiwi, peeled and chopped
2 salad onions
1 clove garlic, minced
3 tablespoons fresh mint, chopped
1-2 tablespoons light olive oil

 

Method:

  1. Preheat grill.
  2. In a large bowl, combine papaya, kiwi, salad onions, garlic, mint, and olive oil. Set aside at room temperature until ready to serve.
  3. Lightly oil the salmon fillets and then season with salt and pepper. Layer them on to the grill. Grill each side evenly for 4 minutes or until cooked through.
  4. To serve, place salmon on to serving plates and top with papaya and kiwi salad.
