Spicy Chicken Wings (makes 20 pieces)
Ingredient:
1.5kg Chicken wings, separated at the joints, discard wing tips.
1-2 fresh chili
To make marinade:
60ml fresh orange juice
60ml fresh lime juice
1 teaspoon orange zests
1 teaspoons lime zests
½ teaspoons freshly cracked pepper
2 tablespoons Tabasco sauce
2 tablespoons fresh coriander, chopped
3 large cloves of garlic, minced
2 tablespoons light olive oil
To garish:
2 long strips orange zest, curled into spirals
2 wedges fresh limes
2 sprigs fresh coriander
Methods:

Rinse chicken wings and drain dry.

In a large bowl, combine all marinade ingredients and then add wings. Marinate the wings overnight, cover and refrigerated. Toss the wings around several times so they get even marinating.

Remove wings from the refrigerator 30 minutes before baking time.

Preheat over at 180 °C (350 °F).

Arrange the wings in a shallow roasting pan. Bake wings for about 25mins or until they are cooked thoroughly. During baking time turn the wings several times to allow even cooking on both sides.

Meanwhile, pour marinade into a saucepan over heat until full boil, add chill to taste. Pour boiled marinade into a serving bowl use for dripping sauce.

To serve, remove wings from baking tray onto serving platter with dripping sauce. Garnish with spiral orange zest, lime, and coriander sprigs.
